Plant diversity & art in a bowl
I've been vegan for a few years. Last year I came across the fascinating work by Dr Will Bullsiewicz (https://theplantfedgut.com ) and became more aware than ever about how important it is to include a variety of plants in our meals. According to him, the number one predictor of gut health is the diversity of plants in our diets.
I already used to eat different plants throughout my meals, but since learning this, I started to explore even more.
There's definitely something magical and calming about assembling a colorful bowl of food and I use that time to disconnect from the world a bit and relax. I call it art in a bowl. It's fun to combine simple ingredients and each time experiment with them in a different way, the possible combinations are endless... chopped, sliced, shredded, raw, cooked....
