Red curry lentil & vegetable soup
We started our year at the mountains, our favorite place to be!

The snow started pretty slow this year but it's been cold enough to crave some hearty and warming soup. This week I made a lentil & vegetable soup using some red curry paste & ginger and it came out seriously delicious! A nutritious & flavorful meal to bring to the mountains in a Thermos.
๐ฟ 1 chopped onion
๐ฟ 3 minced garlic cloves
๐ฟ 1 Tbsp grated fresh ginger
๐ฟ 3 chopped carrots
๐ฟ 2 chopped small white potatoes
๐ฟ 2 chopped small sweet potatoes
๐ฟ 1 chopped red pepper
๐ฟ 1 cup red lentils
๐ฟ 4 cups low sodium vegetable broth
๐ฟ 2 cups water
๐ฟ 2 to 3 Tbsp red curry paste
๐ฟ 1 tsp salt
๐ฟ 4 cups chopped kale (or other greens)
๐ฟ 1 can light coconut milk
๐ฟ juice of 1 fresh lime
๐ฟ 1 Tbsp maple syrup
Start by sautรฉing the onion for about 6 minutes until translucent.
Add the garlic and ginger and sautรฉ for a couple minutes more.
Add the vegetables, lentils, broth, water, curry paste & salt, bring it to a boil, cover and reduce the heat. Cook for about 20 minutes.
Add the greens, cook for a couple minutes.
Stir in the coconut milk, lime and maple syrup.
Top with avocado or cilantro (optional).
