Red curry lentil & vegetable soup

We started our year at the mountains, our favorite place to be!

Happy New Year, everyone!!

The snow started pretty slow this year but it's been cold enough to crave some hearty and warming soup. This week I made a lentil & vegetable soup using some red curry paste & ginger and it came out seriously delicious! A nutritious & flavorful meal to bring to the mountains in a Thermos.

๐ŸŒฟ 1 chopped onion

๐ŸŒฟ 3 minced garlic cloves

๐ŸŒฟ 1 Tbsp grated fresh ginger

๐ŸŒฟ 3 chopped carrots

๐ŸŒฟ 2 chopped small white potatoes

๐ŸŒฟ 2 chopped small sweet potatoes

๐ŸŒฟ 1 chopped red pepper

๐ŸŒฟ 1 cup red lentils

๐ŸŒฟ 4 cups low sodium vegetable broth

๐ŸŒฟ 2 cups water

๐ŸŒฟ 2 to 3 Tbsp red curry paste

๐ŸŒฟ 1 tsp salt

๐ŸŒฟ 4 cups chopped kale (or other greens)

๐ŸŒฟ 1 can light coconut milk

๐ŸŒฟ juice of 1 fresh lime

๐ŸŒฟ 1 Tbsp maple syrup

Start by sautรฉing the onion for about 6 minutes until translucent.

Add the garlic and ginger and sautรฉ for a couple minutes more.

Add the vegetables, lentils, broth, water, curry paste & salt, bring it to a boil, cover and reduce the heat. Cook for about 20 minutes.

Add the greens, cook for a couple minutes.

Stir in the coconut milk, lime and maple syrup.

Top with avocado or cilantro (optional).
