Yummm...Refreshing Summer treats
Blending frozen fruit without adding any liquid or adding just a bit is a simple, easy way to make some incredibly healthy, refreshing and delicious treats.
I like to use a food processor instead of a blender because the blender tends to warm the ingredients faster, the texture turns out better with the food processor but either option works.
I have some favorite recipes but I'm always experimenting with new combinations. The possibilities are endless: blueberry-ginger, chocolate-cherry, raspberry-peach, ginger-plum...
Frozen banana is a great base ingredient because it adds some pretty wonderful creaminess besides adding sweetness and therefore eliminating the need for any type of sweetener.
My freezer always, always has some frozen ripe bananas!
Check out some of my favorite experiments:
**Blueberry ginger**
🌿2 frozen bananas
🌿1 Cup frozen blueberries
🌿1 tsp vanilla extract
🌿1/4 tsp powdered ginger
✋🏾Process the bananas for a few seconds in the food processor, add the rest of the ingredients and process until smooth.
**Banana chocolate, drizzled with flavored balsamic vinegar**
Have you tried drizzling your ice cream with some flavored balsamic vinegar?
🌿3 frozen bananas
🌿1/2 Tbsp cacao powder or 1 Tbsp unsweetened cocoa powder
(cacao powder is stronger so use less)
✋🏾Process the bananas for a few seconds in the food processor, add the cacao powder and process until smooth.
✋🏾Serve in bowls drizzled with the vinegar.
**Chocolate cherry**
Fresh cherries make some incredibly delicious treats, here are a couple favorites in our home:
🌿2 frozen bananas
🌿1 Tbsp of almond butter
🌿1 Cup fresh pitted cherries
🌿2 Tbsp of cacao nibs
✋🏾Process the bananas for a few seconds in the food processor, add the almond butter and half of the cherries, process until almost smooth, add the rest of the cherries and the cacao nibs and pulse 3 to 5 times to incorporate but leaving chunky pieces.
🌿2 frozen bananas
🌿1/2 Tbsp cacao powder or 1 Tbsp unsweetened cocoa powder
🌿1 Cup fresh pitted cherries
🌿2 Tbsp of cacao nibs
✋🏾Process the bananas for a few seconds in the food processor, add the cacao powder and half of the cherries, process until almost smooth, add the rest of the cherries and the cacao nibs and pulse 3 to 5 times to incorporate but leaving chunky pieces. Sprinkle some cacao nibs when serving.
**Plum ginger**
🌿2 frozen bananas
🌿1/2 to 1 tsp of fresh grated ginger
🌿2 fresh black plums
🌿 Coconut chips (optional)
✋🏾Process all the ingredients in the food processor until smooth.
✋🏾Sprinkle with coconut chips.
Note: The color of the dessert will vary depending on the color of the plums. On the picture above, the plums had a different color than the plums on the video below:

Raspberry peach
🌿2 Cups of frozen raspberries
🌿1 Tbsp of almond butter
🌿2 pitted dates
🌿1 chopped fresh peach
✋🏾Process the the raspberries, almond butter and dates in the food processor until smooth. Add the chopped peach and pulse a few times to incorporate leaving some chunks.
